What Is Mogroside?

 

Since mogroside is directly extracted from plants without chemical synthesis, it is a natural sweetener. The sweetness of mogroside is about 300 times that of sucrose, and its energy is almost zero. It is easily soluble in water and alcohol, has heat stability in boiling water and is not easy to ferment and mildew. Compared with steviol glycoside, mogroside has a longer duration of sweetness, weaker bitterness and longer aftertaste. Regarding the sweetness components of Luo Han Guo, there have been related researches since the 1970s: In 1975, American scholar Lee used ethanol extraction and chromatographic column separation methods to study the components of Luo Han Guo, and obtained a substance that is 100 times sweeter than sucrose , and deduced that its composition is triterpenoid saponins. Based on Lee's research, researchers successively extracted more than 10 kinds of triterpenoid sweet substances from Luo Han Guo. Among them, mogroside V is the main sweet component. It is a high-sweet tetracyclic triterpenoid saponin. Due to its high sweetness, low energy, safety and non-toxicity, mogroside V has become a hot plant extract in the international market, and its demand is gradually increasing.

In the traditional food industry, sugars represented by sucrose and fructose have always been the main sweeteners. As a food additive with high sweetness and does not participate in metabolism or provide energy, mogroside is an ideal sucrose substitute.

In different categories of food, some of them are directly added with mogroside, while the other part is added with ingredients of Luo Han Guo powder.
